Hmmm hmmm hmmm These are delicious!
Buffalo Chicken Egg Rolls
Ingredients:
Cooked and shredded chicken
1 large or 2 small onions finely chopped
1 med-large green pepper finely chopped
Cream cheese (melted to make sauce)
Hot sauce
Egg roll (larger) or wonton wrappers (smaller)
For my large pan that filled 20 Egg Roll wrappers and 24 wontons this is what I used... Can be adjusted based on how much is needed...
4 chicken breasts (about 2-3 lbs total)
2 Small Onions
1 med/large green pepper
2 blocks cream cheese
Hot sauce (no exact measurement... Mixed and tasted as I went along... Mine weren't too hot)
Cook chicken and shred (i slow cooked mine but anyway would work).
Chop onion and pepper. (Anything can be added based on taste and preference)
Melt cream cheese (I melted each block about 1 min in microwave).
Mix in Hot sauce to your preference of hotness.
Mix all together and fill wrappers.
About a (cereal spoonful) in center of won ton and fold up sides to center... Use a little water to seal if needed.
About 2 (cereal spoonfuls) in first 1/3 of egg roll wrapper and roll up from bottom of diamond tuck in sides about half way and seal end with water if needed.
These can be baked or air fried but I pan fried mine in hot oil until golden brown... Doesn't take long.
I am with you on that! I never really pan fry a lot except maybe stir fry but these are so delicious pan fried I would be scared to try them another way incase I didn't like them! I wish I would have made mine hotter though but I made them for a party and not everyone likes hot! :-)
These look delicious! Though I bake a lot, I think pan-fried is the way to go for egg rolls :)
